Bristol needs a fresh perspective on its current “drinking” culture. Microbreweries and brewpubs are at an all time high in popularity and show no sign of declining. Local CT brewpubs such as Willimantic Brewing Company, City Steam and Southport Brewing are always full of lively crowds and don’t face the same problem that most bars do; that most folks usually don’t go until after 7PM.
Wiki Definition: A “brewpub” brews and sells beer on the premises. A brewpub may also be known as a microbrewery if production has a significant distribution beyond the premises – the American Brewers Association use a fixed 75% of production to determine if a company is a microbrewery.

This would be awesome!
Taylor, amazing suggestion dude. Us Polish sure like our beers, lol.
Is it possible that anyone knows any of the current brewers in CT that is looking to open a second location?
Yes and yes, Great idea. The Willimantic Brewing Company is one of the best. Calvary Brewing is new and in Oxford, but possibly would be interested in setting up a brewing/restaurant location here. The assistant brewer for Calvary, Justin Benvenuto, is from Bristol.
Absolutely. I’ve been saying for years that Bristol is the perfect city for a brew pub.
Brew pubs attract people with money to spend.

While I like the idea of a brew pub, I would really want to be certain that it was one that had a decent variety of beers to chose from . Nothing worse than going to a brewpub only to see there are only 4 beers on tap and not a lot of variety.
Maybe a regular irish pub with a wide selection would suffice?
ask Crabby Al’s in Thomaston to open a little restaurant…food is great and atmosphere casual…
I’ll throw a shout out to Calvalry Brewing too.
I talked to Justin the night of the beer tasting and the guys in the company are actually from Bristol, and if everything falls just right they expressed interest in exploring the potential of setting up shop in downtown Bristol.

Cavalry Brewing beers are brewed using traditional English methods on American equipment to create fresh and flavorful ales and stouts to entice the most discerning palate. Each product is a balance between the barley and the hops to provide an easy drinking ale or stout.

City Steam, in Hartford

Some cool background on the brew process.
The Hartford Steam Company supplies economical steam-heating and chilled water for cooling to many buildings in Hartford through a district heating and cooling system. Hartford Steam has engineered a way to run steam pipes into our brewery cafe. Enabling us to power our 15-barrel brewery with “city steamâ€. You can see the steam firsthand when we blow our antique steam-whistles. And ask our brew master about the technology … he’ll tell you brewing with steam is a dream come true!
Premier Brewing Process
When steam was introduced to the brewing process in the mid-1800’s, it was the epitome of modernization. No more stoking fires or shoveling coal to keep the kettles boiling! All a brew master had to do was turn a few valves and the vapor started rolling. Better yet, steam provided a faster, more consistent flow of heat and, in turn, a better brew of beer.
Best of all, whether you’re drinking Porter, Pilsner or City Steam Ale, you know you’re getting the best brew in the state–at City Steam.
I love this idea. I know one of the guys at City Steam and they’re doing so well (even in this economy) that they’ve been looking to farm out some of their brewing to keep up with demand.
We need anything except chain food restaurants and fast food.
This would be awesome! My boyfriend is an awesome homebrewer and we are always looking for brew pubs to visit and for his future employment
